And I do think I may have kept
the best till last,

because your final challenge is
going to be right here in Brighton,

cos I am entrusting you with two
of the city's much-loved pubs.

Both of these establishments
really need your help

to stand out from the crowd.

Brighton, the UK's
most popular city by the sea,

with its iconic pier
and vibrant beaches.

The Fountain Head Pub must appeal
to a younger clientele

of daytime and evening crowds,

and the two-floor
Earth & Stars gastropub

needs upscaling
and a total rebranding.

The winner will receive a
career-changing commercial contract

to make over
a central London cocktail bar.

So the gloves are off, right?

We're playing dirty.

I have to say,
this is a competition,

It's been great seeing them evolve.

Monika's got more confident,

and I think Jack's sort of
trusting his gut a bit more,

isn't he, when it comes to design?

Oh, it's just the best thing to see
them kind of blossom and flower

and kind of ease
into enjoying what they're doing.

Cos they start off
with, like, oodles of talent,

but it's just
believing in themselves

and then having the courage to try
something a little bit different.

Now, it's pubs this week.

What do you look for in a pub,
apart from a large Jagerbomb?

Not sure that would be my choice
of tipple but, apart from that,

I look for somewhere I can just
sort of tuck myself into a corner.

I want to feel like I'm in
a sociable, warm, comforting place.

How important is functionality?

Cos obviously a gastropub
is going to be very different

to a trendy hang-out, isn't it?

Well, I think it's everything.

So you've got the gastropub,
which does amazing food,

and it just needs its interior
brought up to the same level.

And then you've got another pub
that's on a very busy part

of North Lane, so it's really got
to stand out from the crowd

and it wants to appeal to a kind of
slightly younger, trendier audience.

Do you want to see taxidermy
and antlers and things painted black

in Monika's and do you want to see
panelling and chandeliers in Jack's?

I do want to see
their interpretation of each pub.

And I'm really excited
to see what that could be.

You know, Alan,
what do you look for in a pub?

A nice pink gin and a dogfight.

Oh, God.

You could say I'm a traditionalist.

The finalists are checking out
their pubs for the very first time.

Oh, what a big space!

Oh, this is overwhelming.

And then the ceiling is way too low.

I'm not going to lie,

the sheer size of it
is intimidating a little bit.

Monika's meeting Libby, manager
of the spacious, traditional pub,

the Fountain Head.

We want to be more attractive
to a younger customer.

We would like to be a bit more
lively, a bit more current.

Like a complete rebranding, kind of?
Yeah.

It should feel like one big,
happy family having a great time.

Nice. That's how it should be.
Nice, nice.

That sounds really exciting.

Cos of the low ceiling,
it can feel quite dark.

We've got a lot of exposed brick.
A little bit's great,

but, like,
we've got quite a lot of it.

The whole pub
is one big open-plan space,

and so it's definitely
going to be a little bit tricky

to zone it out,
to figure out what goes where.

I love where the bar is placed.

If this is transformed into the wow
factor for people,

they just grab their phones and
they want to take a picture of it.

They want to share where they are.

Anything will be
a breath of fresh air here.

So, yeah, looking forward to it.

Because this is the final,

this is honestly
my last moment to prove myself

because I really want
to win at this point. I really do.

Just up the lane,

Jack gets his first look
at the split-level gastropub,

the Earth & Stars.

Oh, my gosh!

Wow, this is big.

And I've got an upstairs space
to think about as well.

Ah!

He's meeting manager Rishi.

So we won the best pub award,

and we also won an award
for our gastro food.

Everyone used to talk about
the Earth & Stars,

and I do feel that,
over the past few years,

it has lost its way.

I want this to be
an award-winning pub again,

and somewhere which people
talk about and want to go to.

Downstairs should feel
like a relaxed pub.

So upstairs is a bit
of an awkward space,

and I think that's really where
you could make a lot of impact.

So more of like a relaxed
daytime feel maybe down here

and then upstairs
maybe more for party,

and deliver something that even you
might not think could be achieved.

Ooh, wow, exciting. Yeah.

There's an immense amount of
pressure for me to get this right,

but I'm not going to play it safe
with this design.

Not this week, not in the final.

some risks taken.

After eight days
to prep their plans,

the designers are back in Brighton

to embark on
their greatest challenge so far.

With a complete rebranding
of two prominent pubs,

Monika and Jack have three days

and double their normal budget
of £3,000.

As it's the final, they've each
chosen an ex-rival to help.

Semifinalist Tom has made
a return to help Monika.

If Monika needs me
to clean the toilets,

if she needs a foot massage,
whatever she needs, I'm her wingman.

What's the plan?

Basically, you're like my upholstery
guy, which I think you knew that.

of trades are on hand to help.

Hi, guys! I'm very excited.

It is going to be
a big transformation.

Everything is going to be
painted in one colour.

Oh, great. Whoo!
OK, let's do this!

Brilliant. Let's do this!

The reason why I'm painting
all the walls and the ceiling

in the same colour is to disguise
how low it actually is.

It just becomes one space.

With everyone assigned
to their tasks,

Monika can focus
on the enormous bar.

This is going to take me longer
than I expected.

It's really gross and, like,
it really needs a proper clean

cos I need to prep it
really, really carefully

so I can copper-leaf it.
Going to be here, cleaning.

Monika will give a fresh, youthful
twist to the open plan-space,

painting from floor to ceiling
in a contemporary dark blue.

The bar will be centre stage
with its front and sides

completely covered
in copper leaf.

The ceiling section
will have floral wallpaper,

and behind the bar will be decorated
with distressed mirrors.

Each new zone will have tables
with fresh tops

and the chairs painted
in dirty pink.

Orange velvet banquettes
and new multifunctional benches

will make cosy areas and be movable
to make room for dancing.

So we have a curved banquette.
That's there and then that's there.

To create a day-to-night pub
is definitely tricky.

I need to play with
multifunctional solutions,

lots of different furniture
and zoning.

Zoning, zoning, zoning is something
that I really need to focus on.

Just a few streets away...

Morning, morning. Morning!

..Jack's ready to reveal his plans
to his team.

So it's called the Earth & Stars.

We're going to go Zodiac themed.

Jack's celestial vision
for the gastropub's downstairs space

will see the ground walls
painted a dark blue

and the lower panelling,
a rugged olive.

The floorboards
will be painted black,

and the little nook
close to the stairs

will be painted mustard yellow.

The new circular tables
will be decorated

in a gold leaf finish.

He will enhance the bar by creating
a bespoke wraparound golden shelf,

and the front and sides
will be cladded with metal piping.

I actually have a little present
for you all.

Hooray!

So Team Jack for the win.

Interior shop owner Jack
has also chosen

to make the bar central
to his design.

On the bar,
I want to do this extended ledge,

which is going to be
coming all the way around.

Enough to put a drink on
that you can sit under

with some stools.

I think the biggest worry
is I need to create a bit of wow

and I think there's this bar
to really think about

how to make it a focal point.

Then there's going to be
a circular bit here,

like a little circular table.

There's just, like, a lot of
pressure hanging on this design.

I want it to be, like,
the best it can be.

There's a lot of banquette seats
to upholster.

is feeling the heat.

We've got armchairs to upholsterer,
we've got back cushions to make,

so it is a big challenge for me
to get through these

in two to three days.

a last-minute change

from her original master plan of
painting everything in one colour.

We are not painting this fireplace.

I know that the manager
is quite vocal on covering it

and not having so much of the brick,

but when it's done right,
I personally love brickwork.

So just letting you guys know -
don't paint it.

I think that this competition
helped me figure out

how to best utilise my ADHD brain,

because it is the butterfly brain

that comes with
so many ideas so fast,

and that's why
it's sometimes difficult,

but it's also a good thing.

I have a lot of ideas
and I change my mind a lot,

but it helps
when you're creative.

So what kind of tattoo
do you want next?

So I was actually thinking of
maybe having, like, a bird's claw.

A claw is such, like,
a symbol of confidence.

Monika is very unique and I think
that all of her tastes come out

through her interior design work,
which is what makes them so special.

I'm just very proud of her.

That is really beautiful.

The biggest difference
between Monika in week one

and Monika now is confidence.

I've learned to listen to a client.

I was naive before in thinking
that being an interior designer

is literally doing
what I want to do.

That's not always the case.

I would actually really love
my signature style

to become the next trend.

to get their homes decorated

and other people
to come and be like,

"You're doing the home like Monika."

I think that's
the ultimate dream, honestly.

The whole pub is ginormous.

I don't know if I'm on schedule,

I think this is what
stresses me out the most,

just making sure that we finish and
that we finish to a good standard.

Day two and the finalists
have woken

to some classic
English seaside weather.

It is raining, it is cold,
so the weather needs to change.

This is not a good sign.
Not a good sign.

The first couple of minutes
are always a little bit hectic.

There's just so many people.

With the painting in hand,

Monika can turn her attention to her
ambitious rewiring of the pub.

There is so much to be done
electrics-wise. OK.

I had the plans for a lot
of new ceiling lights

and some of them I want in places

where there is
no existing ceiling light.

I'm not an electrician.

If there's no plug-in,
then I can't do it, right?

Jack is making a start on
transforming his newly-designed bar.

So me and Buse,
we're putting on the first layer

for the fabric to go on the bar.

So basically we're putting,
like, a velvet on top of this.

What's the official way
of measuring, do you think?

A finger? But your finger's
bigger than my finger.

Biggest job are the benches.

I've never leafed this fast
before in my life,

and yet not fast enough.

I'm stressing about the bar
being copper-leafed.

I want to finish the bar
and I want to do it myself

and I need it to be looking better
than whatever Jack is doing.

Back at the Earth & Stars,

the walls are being given
a two-tone paint job.

Hey, Jack, I have a thought that

But architect Buse is troubled
by Jack's colour palette.

It might elevate the space
a bit more

if the blue was running from the
floor all the way to the ceiling.

All the way to the top? Oh, OK.

In my mind, the panelling
should be a different colour

to what the masonry
or the plasterwork should be,

cos there's already loads
of blue upstairs

and I just didn't want
loads of blue downstairs.

So if this went all the way
to the floor,

the yellow would pop more.

I think so, yeah. OK.

I'll sort of think about it
a little bit. Yeah.

If this is already being difficult,

I just know that the other ones
are just going to be difficult.

has been put to one side.

zoning in on his zodiac theme.

This is going to be your canvas
with some, like, really faint clouds

and then the stars are going to be,
like, the main attraction.

Jack is creating a private,
more intimate upstairs space.

He will continue
his celestial vision

by featuring a night sky
cloud mural on the ceiling

with a gold star constellation.

There will be vintage
zodiac prints on the walls.

The tabletops will be gold-leafed,

and upcycled chairs will be covered
in a striking horoscope material.

A spider light
will fill the booth area

and new velvet curtains
and vintage table lamps

will enhance the dining spaces.

The brief was to put this place
back on the map again

and it's a gastro-pub,

so it's got to be practical
for eating, drinking, socialising,

but I think it's really tough, you
know, trying to be, like, earthy,

but they want this,
like, sophistication and glamour.

It's definitely quite hard
to tie together.

Did you put these stars up here?

So where's the gastro-pub part?

That part is probably downstairs,
so that's a bit more, like, daytime.

And then up here's
a bit more, like, night-time

where you'd probably
just have drinks.

on your to-do list?

There's still lots to do
on the to-do list.

I want it all finished,

so I'm going to be cracking
some whip on people.

of tiling the back section.

The effect that I'm going for
is an old, aged mirror.

So, then, do you want me to go
right up to the ceiling, then,

into the corner? Yeah, yeah.

Monika is stressed.

She feels like she gets
overwhelmed by stuff

and maybe because she's trying
to manage all the things

and she doesn't think
she's doing a good enough job,

and I think she needs to focus
on the bigger picture

and let us worry about
the little bits.

It's lunchtime on day two,

and Jack has asked Buse to take
a quick snoop on the competition.

So is this it? Is this
all the space you've got? Yes.

You don't have an upstairs?
No, we don't have an upstairs.

What colours are you doing?

We are... To be honest,
it's not far off from this colour.

And we've got some
green panelling down. Yeah.

You know, Jack's classic.

I won't give too much away.

It does make me nervous,
whereas I was...

I was really confident that Jack
had, like, got it in the bag before.

I do think he might need

I personally feel
quite strongly about that.

In terms of colour,
it is quite similar to our blue.

painted everything blue.

I just think that consider tonight
to see if you want to enhance it

even more and make it pop out,
similar to what she's done.

Going with a full colour
might be a good option.

In Buse's wonderful brain,

it should be streamline
and contemporary

and, for me, I find it a bit boring.

I think I'm going to
stick with my guns.

I told her
I was going to sleep on it,

but I think I've already slept on it
without closing my eyes.

So my design style is over-the-top,
a little bit dramatic and opulent,

and I think I have
had a sprinkle of that

in every single challenge so far.

My biggest cheerleaders
are my boyfriend and my family.

I just know you're going to win.

Alex has kept me very motivated.

Every time I come home, he's like,
"You've got this, you've got this."

I can't wait to be
a stay-at-home husband

and you can bring in the bacon.

There's definitely a part of me
which thinks I can win,

but I've always just downplayed
everything that I think I could do.

So I might just need your help
just a little bit,

cos I know how particular you are.

When we found out
that Jack had cystic fibrosis,

he was 16 years old.

As devastating as it was,

it really helped because when you
don't know why your child is poorly

and then you're given a diagnosis,
we knew with all the drugs available

that we could look after Jack
as much as possible.

You need to be eating, drinking,
looking after yourself.

Listen to your mama.

I'm doing all the things

These do need to be done

Whereas upholsterer Tom

I'm very happy in this situation,

As time runs out on day two,

Monika still hasn't
completed her bar.

because I'm rushing.

Really, this is not
my best quality job.

And a new problem has popped up.

The chairs are taking so long,
they're fiddly to paint

and I think everyone
is secretly hating me

for making that decision.

If you're planning
to have all the chairs painted,

we might struggle
to get them finished.

I really didn't realise
that we needed to prime

Welcome to Brighton for the final
with our two remaining designers,

who both have a pub to overhaul.

But Brighton has a lot of pubs,

so what we're really looking for is
for them to have made something

that's going to stand out
from the crowd

and have a real design signature.

Being in a pub is all about
that customer experience.

It's got to be inviting,
but also very captivating,

so there's a lot to juggle there.

So I'm looking
for swoon-worthy interiors

that make me want to linger longer.

It's a really tricky brief.
But it's the final.

We can't make it too easy for them.
THEY LAUGH

I am so excited
to see what they've done.

My heart's a bit in my mouth,
I have to say.

MONIKA: This pub is
my personal best transformation,

my personal best design,
and I feel very proud.

This whole competition
and me taking part in it,

I did it to kind of prove myself
that my passion for interior design

is something that I could do
as a professional.

So, yeah, it's up to the judges now.

MICHELLE: This looks new.

It gives a little hint of something
going on inside. Doesn't it?

Ooh, wowser.

I am, like, drawn to this sparkly
and yet slightly subdued bar.

It's pretty cool.

She feels like a designer
with a very bold heart,

cos you can feel the power of her
vision when you look at that bar.

One of the key parts of the brief
was that the owner wanted,

like, the bar to be a focal area
for social media.

I don't know about you,
but I'm feeling that this delivers.

The bar is absolutely iconic.
You just put the picture up

and your friends will
know where you are.

That's what makes something cult,
and she's nailed that.

She aged these mirror tiles herself.
Did she? So clever!

I love the fact that she's taken
this print up on the ceiling,

but also kept within
the same palette of colours.

I love this, where it sort
of dribbles into the copper,

so it feels so unified
and super harmonious.

She came in with
a very strong signature style

of quite gothic, dark, decadent,

and I have seen her really learn to
modulate it according to the brief.

I love that she's taken the colour
of the walls onto the ceiling

so the ceilings feel grandeur.

I'm slightly in two minds
about the pastel with the dark.

I think it's a little bit
of a disconnect. Yeah.

And I also wonder is whether
the tables are a little bit small.

I'm imagining I've ordered
some extra fries.

I've got my salt and pepper, I've
got my ketchup, I've got my wine.

It's all going to get a little bit
kind of chocker on there.

This feels cafe to me.

We could have gone
slightly larger tables.

But there isn't an area
that's sort of been forgotten

or is a bit sad.

I'm quite compelled
to investigate this lovely nook.

I think I'm already booking
my birthday party.

Can we come?
Well, I'll think about it.

Well, the bar has been set high,
but we have one more pub to see.

JACK: I'm really proud
of what was achieved.

It's been, like,
a complete transformation

from what it was to what it is now.

I really love my design

and I hope that Michelle understands
the elevation of the design

and bringing it a bit more classy

and not this sort of
grungy pub that it was.

They asked for sophistication,
so I hope she sees it.

I hope she gets it.

Wow.
Such an arrestingly deep colour.

It stands out.

Oh, how nice is this?

My immediate sense is of elevation.

It is beautiful.
The colour palette is very soothing.

Greens and blues are quite earthy

and they feel quite restorative
and cocooning, so I'm loving that.

And then all of these quite
glamorous touches that he's added.

I mean, this is very clever.
He's clad the bar.

He's then upholstered the bar,

then he's added the kind
of pole detail to the bar.

Very drawn to this.

You want to kind of gather there.

Really beautifully considered.

And this was a pub that had
no clear design signature at all,

it had no identity,
and he's given it that.

It's almost restaurant level.

This pub is renowned
for its sort of gastro food.

I just wonder if there's a point

where we've elevated it
beyond what it was.

This is supposed to be
field to fork.

It's not very rustic,

and I think it's, almost, you'd want
a little bit more of that.

But there's no question
it's very beautiful.

And we have another floor to see.

Oh, wow.

This is a very different feel.

Beautiful.

I actually really like it up here,
Michelle.

Wherever you look,
there's something interesting.

I like the mural and the stars
and the plants hanging

and the lighting.
I think it's really lovely.

The deep, inky colour palette
kind of grounds you

and makes you want
to just sit down and linger.

I also think, in such a small space,

it's really clever
to not be scared of pattern,

cos pattern adds pizzazz.

These chairs are a thing
of absolute beauty. Astonishing.

It feels like a gastropub,
which is the brief.

So it's actually upside down.

Well, I have a lot of questions
for both our designers, though,

to really understand the nuts
and bolts of their design decisions.

But this is not going to be easy.

Toughest decision ever, I would say.

Whilst the finalists head
to the Brighton studio,

the managers get a first look
at their reimagined spaces.

Wow, this is phenomenal.

Love this - little drinking shelf.

It feels more restaurant-y.

This is brilliant.

This is way more
of an inviting space.

I think he has gone
slightly off-brief,

but I really love what he's done.

Oh, my goodness.

This is incredible.

And the copper is just fab.

It definitely is more attractive
to a younger customer.

The only thing is, I think
we might need some more chairs,

because I think it's going
to be quite popular.

After eight weeks
and eight commercial challenges,

who will take the prize?

There's just so many emotions.

I'm excited,
I'm nervous, I'm stressed.

Everything all at once.

I'm so glad
it's the end of pubs week.

I was still painting, you know,
like, up until the last minute.

It was so close.

I can't put into words
how much I would love to win this.

It would be...

..outer-world experience.
Yeah, it would be phenomenal.

Are you proud?
Yeah, I'm really proud this week.

I'm really, really proud. Are you?

I think it was my personal best.

Were you impressed by the two pubs?

So impressed.

I really felt, with both of them,
that it all came together.

I think both of them
threw everything at it.

You had upholstery, you had copper
plating, you had gold plating.

Both were breathtaking,
weren't they,

in such different ways?

Mm. I mean, we've got to talk
about Monika's bar.

She spent literally a day
copper-leafing that bar.

You can't take your eyes off it.

I was obsessed with that bar,

and I felt a real sense
of excitement when I walked in.

It lifted my spirits.

You feel that there is this boldness
and this courage to her design.

And you feel her passion.

That is absolutely the conclusion
of where we've seen her grown from -

someone who was actually
really lacking in confidence

to start off with.

And then, as she grew, thinking,
"I can do this."

Let's talk about Jack.
Was you impressed?

With Jack, he's had
a kind of consistency to his design.

And he used, like,
all these glorious materials.

I mean, we felt
it was very glamorous,

it was very sophisticated.

And he delivered
something incredibly polished.

You walk into it, and it's
kind of Gatsby meets gourmet.

Then you went upstairs,
I thought it was gorgeous upstairs.

Really lovely.
You see his real flair there.

How are we going to pick a winner?

I mean, they have both done
incredible transformations.

But the final is absolutely about,

what did they deliver,
to the brief, on this occasion?

You made it. You've done it.

You've finished that final project.

So, first off,
absolute congratulations.

Thanks so much.

Your pub has a field-to-fork ethos.

So how did you feel
that you represented that

through your design?

Some of the greens and stuff,

I wanted to introduce a
bit of nature that way,

and some of the blues just,
I know it's silly,

but even, like, just the sky
and bringing the outside in,

and just leaving some of the natural
materials in there just still raw,

like the wood upstairs
and the table tops.

I didn't want to go too cliche
with it, though,

and have like pictures of fields
and pigs and stuff like that.

I felt your pub oozed
a lot of glamour,

so I'm wondering
where those references came from.

The owners wanted
just a complete change,

and what they had
wasn't working for them,

and they said they wanted
maybe a bit of glamour.

And that's what I wanted
to try and capture.

I think you were very clever
with the palette,

because it was very edited,

so you didn't use
lots of different colours,

so it automatically felt incredibly
harmonious and sophisticated.

But then you kind of ramped it up

and covered the backs of the chairs.

So it was adding
this finishing touch,

a herb or a spice, if you like,
to the final look.

And I thought those details
were super clever.

And you wanted
the drama and the theatre,

and that is absolutely what we felt
when we walked in there.

It was breathtaking.

Where did you get the idea
for the gold extension to the bar?

I thought it was beautiful.
When I go to a bar,

I like to sort of sit
and have a drink at the bar.

So I just thought
about extending it out.

I quite like the idea of,
anything that I did around it,

maybe there could be some tactility,
something solid that encased it.

There was a real drama
to the downstairs,

I described it as sort of a Gatsby,
kind of, gourmet feel to it.

Upstairs, quite different,
more pubby almost. Mm-hm.

We loved upstairs.

There we really felt that
that kind of palette came together

and it was very earthed
by that floor.

Definitely. Oh, awesome.

OK, so, final question for me.
Why should you win?

I think it would just give me,
like, confirmation

that what I'm doing is good enough
for other people

and not just myself.

I think it'll be
a massive boost in confidence

and a shift in my life.

From the first project, I mean,
you showed us some magical designs

all the way through,

but there was always
that little bit of, like,

you didn't quite believe
in yourself.

Yeah. And you absolutely should now.

Yeah, I do feel
a ton more confident now.

Hi, Abigail.

So your pub wanted
to attract a younger demographic,

it wanted to go trendier,

it wanted that real kind of
day-to-evening vibe... Yeah.

..which is not easy to pull off.

So how did you begin to kind of
represent that in your design?

What I tried to do is
play a little bit with colours

and, like, darkness and light,
in a way.

So I've put a lot of new lighting
to create ambience,

to create more, like,
zones and spaces.

I wanted people to,
when they walk in,

I wanted them to feel...the space
to feel inviting and warm

and almost like a little bit private
in some areas as well.

And then the bar, I needed the bar
to kind of just speak for itself

and be, like, the wow factor.

You really feel that about you,
though, Monika.

There's a lot of wow factor in you,

and I could almost feel
that force of nature that you are.

You know, you're like a tame lion
in a way, which is a compliment.

Your bar was clearly
kind of a central feature.

I mean, talk me through the
decision to copper-leaf it,

cos that was no small endeavour.

When I spoke to the manager,

she straight away
kind of wanted the bar

to almost be like
a statement piece in itself.

So I went with copper,
which is warmer,

and it just also felt right for me
with the shape of the bar itself.

The thing that I loved
is how you mottled

and antiqued that mirror.

So it felt like it had been
around the block a few times,

just like the pub.

And, Monika, you did my number one
thing that I'm obsessed with -

you carried the paint
into the ceiling.

Yes! Gold star.

I loved how you chose certain areas
to leave the bricks raw... Mm-hm.

..and then other areas
were painted out.

Originally, every single surface
was to be painted in that colour.

I just thought, "No, I have to pause
for a second, stop the brushes."

And then it was just
that one fireplace

was just too beautiful to paint.

So, challenge eight, you did it.

You stopped... I stopped!
..amid the chaos and took a moment.

This challenge especially, I...

..I really felt
that I listened to my own gut,

and I personally am proud
of...what I've done.

And you sort of had an epiphany,
didn't you?

It was, like, week six,
you sort of went,

"I'm going to follow my gut,"

because there was a lot
of flapping going on.

There was so much flapping,

I thought she was going
to take off at one point.

The beginnings were rocky,
and I definitely would love

to incorporate interior design
into my future.
