so I shaved off some mesquite
bark off the tree

and incorporated it into
my southwest cajun-style seasoning.

Ah, it's a little richer
than a beef flavor

and slightly gamey.

- This is the actual tail.

So I fillet it open.

I pull out my .22, and pop, pop.
