- [Woman] Miso is raw.
- [Woman] No, miso is not raw.
In Jamaican miso you cook the soya beans.
- [Woman] Yeah, yeah.
- [Man] Fermentation isn't a problem.
- It's not a problem. - Cooking is the problem.
- [Woman] Yes, it's not a problem.
I mean, cooking is not a problem.
(people chattering)
- And my project was a energy cycle project.
I ate something and digest,
and if you digest, you have to...
- To go to toilet. - To go to toilet.
So I collected my urine, and then, with my scientist,
I transformed it into compost.
And I used this, uh...
My personal compost to grow vegetables and salad.
Then I harvested and I ate.
So, in a way, my body understood the cycle
of the whole nutrients and energy.
I just follow what nature says.
- [Mario] I like it.
- [Woman] Yeah?
- So, my idea was that there's a contradiction
between the people who are living in perfect nature,
some farmers I've heard, in Poland,
but they don't realize that and there's some people,
like maybe us, who are living in a city,
but they don't know, and they wish to live in that,
like island, or like the paradise in the nature,
like in the earlier time.
- [Woman] What do you do in Berlin?
- What I do?
- So, you are...
- I do...
Not much. (chuckles)

- [Man] This stuff here in English is called cleavers,
but the interesting name is more from German,
it's called labkraut.
When dairy farmers were cleaning milk,
they'd often have huge amounts of hair,
so they used clumps of this to remove the hair
and not to add anything to the milk.
Realized over the years that when they used it,
they could produce cheese.
And when they didn't use it then the milk would stay fresh.
Yeah.
(birds chirping)
(fire crackling)
- I remember my mother, for example, talking about like,
"Be careful, don't eat this, it's poisonous."
"Don't walk with your bare feet, you can cut your feet."
So, there was so much advice that nature is dangerous
and so this is how I grew up.
It just took time to feel connected again, and trust,
and, you know, to see that it's...
That I'm part of big nature cycle.
- There's a theory I read recently,
and it's that agriculture was resisted as long as possible
by most of the civilizations because it wasn't...
They couldn't see the immediate benefit of doing it,
'cause it's obviously massively beneficial to us now
cause we can feed the world with agriculture,
but for the first people to stop hunt
and gathering and to start cultivating the land,
it would've just been a massive effort.
I think farming's got to be radically changed.
The question is, do we have the time
to react so slowly to things?

- Nice to see you, nice to meet you.
- What we want to do here most, is to concentrate
on sourcing and produce.
And, you know, we're working with spelt
and unrefined types of flours, ancient grains.
And then we do have some grains of quinoa
which were imported from Peru.
And, basically, we're not vegetarian,
we're really into good quality produce,
whether it's animals, you know, we love animal fats
as well as bone broth.
And for some that are really good
we're gonna get local bones as well
and fresh bones, bones which haven't been unfrozen,
because it's very important that they aren't unfrozen.
- Cool.
