Dombe noodles were first served
as a dish at feasts.

On Jeju Island,

they slaughtered a pig on a feast day...

and served gwegiban,

a dish consisting of three pieces of pork,
tofu, and sundae.

They also served momguk, a soup...

made by boiling pork broth with gulfweed,
a type of marine plant.

But during the Japanese colonization,

all the marine plants in Korea
were delivered to Japan,

so the people on Jeju could no longer
eat momguk.

So they adopted janchi noodles,
meaty noodles, from the land,

and it's the origin
of dombe noodles of today.

After the independence,
due to a lack of supplies from the land,

pork also got scarce.

So dombe noodles disappeared for a while.

But in the mid-1990s,

it revived as a nostalgic dish,

and now it has become
Jeju's traditional dish...

that is loved by tourists.

And that is when they started
to use pig bones...

to get the milky and rich broth.

Boiling pork is the same as before.

I added doenjang paste,

green onions, a few cloves of garlic,
ginger, and whole peppers.

in the Jeju dialect.

In traditional dombe noodles,

beaten doksaegi must be added.

eggs were served as a delicacy
to the guests who visited our home.

With no bone broth,

I can now fully taste
the unique flavor of pork.

they say this is
how the dish is traditionally made,

so I have no choice but to trust them.

Since wheat had been rare on Jeju,

using buckwheat as the basic ingredient
for noodles must've been a natural thing.
