I'm the CEO of TGI Fridays.

TGI Fridays is a massive brand.

All parts of the country,
people know TGI Fridays.

Fridays is famous as the place
to go for that Friday feeling,

you know, to relax, be social

with family and friends
over great food and drink.

TGI Fridays was actually
the original bar and grill

started in 1965 at First
and 63rd in New York City.

Fridays was created
by Alan Stillman,

who wanted to create a place

where really everyone
was welcome.

It was really the first
sort of female-friendly bar.

You know, it was a time
in the country

where there was a lot happening.

Civil rights and women's
rights and TGI Fridays.

The timing was just perfect.

It was an instant success.

People were lined up
around the block to get in.

It was a whole new scene.

This success
quickly spread across Americ,

with 115 restaurants
opening up in just 20 years.

In 1986, the brand went global,

and they now have 842
restaurants across the world.

This all-American drinking
and dining institution

is worth a massive $2 billion

and employs nearly 60,000 staff.

- I grew up in Maryland.

My father worked for
the National Security Agency.

When I was young,
my mom was at home.

I learned at an early age
that I liked working

and getting paid for it.

I worked on a farm all through
middle school and high school.

I always saw myself
as working somewhere

with a lot of energy.

I started at TGI Fridays in 1989

as a manager in training.

I was very young,
had a brand new baby,

and made basically nothing.

We were oftentimes
making decisions

between food and diapers,
but luckily,

at TGI Fridays, I was given
a lot of opportunity.

Climbed every rung
of the corporate ladder.

After 18 years, I left.

I actually went out and turned
around a few other companies,

so I was gone for 12 years
and then was recruited

to come back about a year ago
to run TGI Fridays,

which, for me, is a dream job.

Coming back to TGI Fridays
felt like home.

We have a big problem
in the industry,

where less people are dining
in our restaurants

in favor of food delivery,

so I really need to drive
traffic into our restaurants

as a top priority.

Shortly after becoming CEO,
I rolled out

several new initiatives
across the business

to broaden our customer base.

You know, new promotions,
new menu items.

And if we don't continue
to evolve,

the price for failure
is go out of business.

I am motivated by 60,000
people around the globe

counting on me to reenergize
a brand that I love.

I don't wanna disappoint them.

I'm gonna go undercover
in my TGI Fridays restaurants

and see what I can learn.

to visit Brittany,

the bar manager here,
who I have heard

is a really good
bartender trainer.

We talk about the bar
as kind of being

the essence of our business.

We sort of originated
flair in bars.

I can remember back in 1989
when I did my training

and we spent a good 10 days
behind the bar,

and it was the worst 10 days
of my training.

What I'm gonna be looking for
is, you know,

the quality of training
of our bartenders,

and while I don't expect to see

a great deal of flair
on a Monday shift,

what I am looking for
is they bring that personality.

- Hi. how are you?

I'm Brittney. - Hi, Brittney.

So do you have any
previous restaurant experience?

- Well, we have
a little restaurant at the inn.

- All right, Fridays is known
for their innovative drinks.

We also have drinks
we light on fire.

- It's like
a science laboratory.

Just gonna try to show you

is just dealing with people

and being able to jump

a late night bar, needs
not just a general manager,

but a strong general manager.

- So when did you come here?

- I came here October 27th
of last year.

- Oh, okay.

- I had taken a break.

I went through
some of my own struggles.

I was involved with

some drugs for quite some years,

and so I got myself clean,
went back to Fridays,

and they were really good,
they worked with me.

Anytime I needed to leave,
if I had to go to a meeting,

anything I had to deal with...

- If I wasn't undercover,
there's no way

that I would have learned
that from her just now.

She's a fantastic trainer
and a very hard worker.

Really special person.

- So you wanna take a break?

It sounds like you've dealt
with some pretty hard stuff.

- Yeah, yeah, I have.

I've been through a lot.

I was involved with some
really, really terrible people,

and I found out
my sister was pregnant,

and I decided I can't have
my nephew running around

and seeing me like that,
and I've been clean ever since.

- You come across as the boss.

- Yeah.

- You were showing me
what to do.

You knew what you were
talking about, I mean...

- I think a lot of people
are ashamed of their past,

and I just think of it as... my
past is what made me who I am.

The reason I am so strong
is because I've been through

other situations like that.
- You better believe it.

than most people twice her age.

not living up to its potential,

how do we get this business
back to its former glory?

As a manager,
there is one main thing

that you have to do
to work in a restaurant.

You have to know
how to multitask.

I'm also the host manager.

It doesn't matter
if we're front of the house,

When the business is going,

when our customers order.

is very important

because we have to have
certain ticket times.

Appetizer is 5-10 minutes.

Dinner should be 10-20 minutes

that needs to get out
the window.

Weekends we're always busy.

So we have to get our gloves on,

and we have to get busy.

So when you see
the black tickets

in the window, this means now
that this food is ready to go.

So this is the food that we need

to get out right now.

you never have big problems.

is just basically sloppiness.

The job of a restaurant manager

does not have to be
that stressful.

It's all about planning
correctly,

staffing correctly,
having a well-trained team.

So somebody needs to sit down
and really coach her

on better leadership.

- We got a guest that's
complaining, so we gotta get

to the kitchen
and find out what's going on...

- With their food, okay?

the guest first.

32 years ago

I know the struggle
of coming here,

That was a lot of support to me.

There's no reason she couldn't

one day.

But there are
some problems here.

It's not properly staffed
for a Saturday night.

They're struggling to serve
the customers they have.

They aren't capitalizing
on the outside space

to get even more revenue
through the building.

This is why the restaurant's
profits are down.

It's something I need to change.

Today I'm in
Bensalem, Pennsylvania.

Gonna work with a line cook
named Abdul.

Typically our best line cooks,

they're gonna know
multiple stations,

serving perfect food.

Over the last
six to eight months,

I've personally upgraded

approximately 80%
of our menu items.

So we've had a lot of change,
so I'm really anxious to see,

you know, are they executing
the recipes exactly right,

consistently well,

so that the quality of our
food is perfect every time?

It's 5:00 p.m.,
and they'll be getting ready

for the dinner rush.

into Fridays, I had a chance.

I got seven brothers,
eight sisters.

At the age of 13, my mom
got shot in the face.

I had to take care
of my siblings

and take care of my mom.

I sold drugs,

went to jail for selling drugs,
and guess what.

Fridays,
they brought me right back.

I've been out here
four years strong.

'Cause I promised
my daughter this time

that I wasn't going back,
'cause at the end of the day,

you know, living my life,

doing what I should have been
doing in the very beginning.

I never would have guessed

that he had the story

has been struggling

in the last few years,

and guest counts seem
to decline year on year.

So we're doing a lot of things
right now

to try and drive traffic
back into our restaurants.

So today I am gonna shadow
a server named Susana,

and I really hope
that by working as a server

all day that I'm gonna gain
some more insight, you know,

that could potentially
refine our strategy

to keep guest traffic high.

for a small inn

in Maine for close to 40 years.

So this is our kiosks and stuff

that we use to put in
our orders and stuff,

and then we do have

We always like
to keep it very clean.

stacked and the ice is ready.

We have to stack up the ice,

We also chop
our own lemons as well.

- Susana was an absolute
whirlwind.

I'd only been in the
restaurant a few seconds

before I was getting
the complete lowdown

on how to be a server
at TGI Fridays.

I knew this restaurant
would be a bit quiet at lunc,

but it was...
It was really a shock

to see how empty
the restaurant actually was.

When's it normally get busy?

- Usually it gets busy
around dinner time.

- Oh, okay. So...

- Sometimes we do
have a lunch rush

anywhere from 2:00 to 4:00.

Usually what I like to do
to bring people in,

I get a couple coupons
and go out

and give 'em
to any guests that we see.

Try to put 'em in the cars.

That way we can bring people in.

- Really?
- To the building.

Yes.
