What is this dish, Chef Ton?

This dish is seabass from Trad province.

It was gently cooked using the sous-vide method,

coated with fish sauce caramel and lightly seared with a blowtorch.

We serve with cream made with charred lemongrass

and fluid gels made with spicy seafood dipping sauce.

The yellow sheet on the top is ripe mango

topped with spicy grape salad

and the garnishing flowers are edible organic herbs from Ratchaburi province.

Though this dish is small, it has a lot of details.

Yes. And they are all made with Thai ingredients.

We soaked them with our own chili sauce and mixed with dried shrimp.

The base is Espuma or mousse that was made with squid ink.

We boiled it with lemongrass and herbs.

The topping garnish is deep-fried chopped lemongrass.

We had local fishermen fished it for us.

Then we cooked it in a confit method.

Technically, the fish got slow-cooked in oil with herbs.

There's lotus stem at the base.

The fish is topped with soya bean and yellow chili sauce,

and garnished with pickled yellow chili and ginger and spring onions.

I'm going to pour soup.

This is sour soup.

It's central-style sour soup with sweetness from palm sugar.

And the broth was made with fish bones.

This is a giant river prawn from Tapee River, Suratthani province.

It's known for the best river prawn in Thailand.

We seared it only on one side.

The topping sauce was made with shrimp head butter and Tom Yum (Spicy soup) sauce.

While the rice is special rice from Pai district (Mae Hong Son province).

The rice is grown in the hill and we cooked it like risotto.

But we added dried squid. And in place of cheese, we used shrimp paste.

It is served with pork belly jam

and with side dishes of usual Rice Mixed with Shrimp Paste.

Please squeeze the lime onto the rice and eat with the river prawn.
