and have compiled some notes on how we can really reinvent these dishes.
While of course still preserving the spirit and integrity
of our traditional and beloved Christmas feast.
Well, we can all appreciate the legacy
Haven has created here, of course.
But tradition is the death of innovation.
Now is a time for us to look to the future--
A future which will continue to be built upon
the firm foundation for which our restaurant is known.

Well, I know you and I discussed some tweaks,

I tried explaining to Preston
that our traditional cuisine is one of Haven's best-selling points.
Yeah and I suggested
that if we are gonna win you over come Christmas,
that we need to make some changes.
[Alexandra] I see.
I must admit, I didn't anticipate there being such a rocky start to things.

I would hate to think that my potential new business partner was
inflexible when it comes to developing the menu
with her head chef,
or that my chef was unwilling to
consider the wishes of his new employer.
No, I'm obviously on board with respecting Haven's legacy.
And I am certainly open to new ideas.

Now, I know this is a diversion from the traditional turkey,
but I present suckling pig roulade.
Now, this very, very tender pork
is packed with a fennel and date stuffing
and served with a pomegranate port wine reduction.
Just consider me cautiously intrigued.

[Preston] On the same plate we've got whole roasted duck
with a cranberry orange glaze
and garnished with deep-fried sage.
Blistered green beans with toasted pine nuts and a hot honey drizzle.
Roasted fig salad with toasted cashews,
kale and crumbled goat cheese.
Last but not least,
cheddar chive popovers.
Hmm.
I know this is a lot to take in at once,
but I think the best approach is just to dive in and see what works.
