Gringotts appears

Clever as they come, goblins,

of beasts.

Sadly, Gringotts
was pretty much destroyed

in the final film.

The Ukrainian Ironbelly dragon
definitely stole that scene.

So, bakers,
your semifinal challenge

is all about fantastic beasts.

- Whoa.

And in honor of the famous
Gringotts dragon,

your tasting element needs

- to be either smoky or fiery.
- Okay.

And we want
your incredible baked beasts

to come to life.

- Ooh.

very irresponsible.

For this challenge,

we may have started here

on this beautiful, pristine set.

But you'll be presenting
your showpieces to the judges

on the set
of the destroyed Gringotts.

a really good scene

For our showpiece,
Dobby is gonna be mainly

carved out of cake,
and sculpted

with modeling chocolate
and ganache

with Tom Riddle's diary,
and a dessert

floating above his head.

They'll find Harry's sock,
and now Dobby is a free elf.

And of course,
he will start to cry.

- Is this too ambitious, Alex?
- But it's the semifinal.

We've got to push ourselves,

because it's, like, iconic.

I feel like we should go

- Yeah, there's a lot
of different sculpting.

I know the Thestral.
Wow. First thoughts?

Bony, skinny, big.

It's a bit ambitious
if there's time,

but I feel that it
would be good to add in

- a little bit of scenery
around her.
- I agree.

It's something
that I think me and you

are known for, right?
Creating a story, creating...

It's not just
the Thestral, right?

It's the Thestral walking
in the Forbidden Forest.

- The Cornish pixies!
- The Cornish pixies!

"Bright blue and known

to be devilishly tricky
little blighters."

-Oh, yeah, they are.
-That is so good.

- I love that one.

I've got three kids,
and this totally appeals to me.

For this fire tasting element

that goes inside
Dobby's body, I'll be doing

a coffee cake with smoke
with dark chocolate ganache.

And that is gonna add

a lot of flavor
to the cake itself.

And also a mole ganache.

Mole, it's a typical
Mexican sauce.

It's a blend of chiles
with some cacao

and it brings
this umami flavor

that everybody loves in Mexico.

- What do you think?
- Mm.

It's different, no?

It's lovely, it's got
a background heat, hasn't it?

It builds.
Yum, yum, yum, yum, yum!

- Molly!
- Hi.

Do you have any animals

or beasts at your house?

Well, we've got six dogs.

Pixies are a bit
like the Chihuahuas,

'cause they're very naughty.

She says she's got pixies.

Then I have big Labradors,

- which are probably
a bit like Buckbeak.
-Yeah?

Very loyal and very big.

You have a few beasts!

I also have three cats.

I live
with my three beautiful cats,

Momo, Mochi, and Saurio.

They are really small
and beautiful.

They are the love of my life.

I pulled out
the cocoa powder,

the tamarind paste,
pink peppercorns,

chili powder, all my chilies.

Just like the Thestral,

our tasting element
will be very elegant.

To find the fiery note,
I will be creating an entremet

that has
a chocolate chili cake,

a blackcurrant
and chili mousse.

In the middle of that,

there's gonna be
a tamarind marshmallow.

The marshmallow is in there
because it's really

to represent
the bone marrow within

the spine of the Thestral.

And then
we're gonna finish it off

with a pink peppercorn
chocolate sablé.

I've been an athlete
my whole life.

I played baseball in college.

I have won four
out of the five competitions

I've done on Food Network.

I've also been nominated
for a Forbes 30 Under 30.

I love competition.
And you know what?

That's maybe another reason
why we're doing this again.

I like to challenge myself.

Buckbeak is a hippogriff,

which means he is half horse
and half eagle.

And it's a really big piece

and we have to cut
thousands of feathers...

-Mm-hmm.
- ...and it's gonna take
a lot of time.

I'm gonna start building
the entire body

- out of cakes real soon, okay?
-Perfect.

We feel like we're bringing
a lot to the table,

always pushing ourselves.

There is only one
opportunity to get
into the finale,

so everything we do
has to be calculated

and planned.

I think
we're feeling optimistic.

It's full of whimsy

Suspended from the candelabra
will be the pixies themselves,

made from fondant
and modeling chocolate.

The candelabra will spin
like a baby's mobile

to allow for a full 360-spin.

And one of the bulbs will be
Priya's tasting element.

Priya, are you
into Cornish pixies in any way?

Yeah, I love them.

Newfoundland
is rich in folklore.

I took some folklore classes.
You know what?

Every time you guys come
through that Floo,

I kind of feel like
you might be pixies too.

So, this is interesting
because it's a much more

complicated structure
than I did last challenge.

But for some reason,
I feel calmer.

We want to set her
in her habitat,

which is the Forbidden Forest.

We'll do some twisted roots,
some mushrooms

and then Jordan's gonna
work on creating big trees

cast from chocolate.

I just don't understand

how I'm gonna

I specialize in cakes

that evoke stories

And I am so thankful
I have spent the past year

in sculpting class
because I feel comfortable

with what I have to do.

So, looking around,

you've got to suss out
your competition.

I know. You can be humbled
very quickly in this kitchen.

'Cause obviously, you know,
there's someone who wins

and there's the guys who don't.

Truly the only thing
I can think about

can be so stressful,

that can lighten the moment.

'cause I think it helps capture
the personality a bit.

we're going to inject
as much personality

into them as possible.

I want them
to all be a bit different,

all be doing something

and kind of interacting
with each other.

I'm just gonna
get cracking on Dobby's face.

One of the things
I enjoy doing most

is magical creatures.

I mean, I've made fairies,

and I've made mermaids,
witches.

Well, pretty much everything.

I think the responsibility
is doing Dobby justice.

He has a very long nose,

his cheeks are very high,
and his ears are really large.

"Dobby can hear!
Dobby must warn Harry Potter."

Because I'm gonna be
making Dobby cry,

I need to insert plastic tubes
into his head.

So, he's gonna cry
out of those little holes

you can see
in the side of his eyes.

I just need to disguise them
a bit more

'cause at the moment
they're huge.

I don't want to spend hours
and hours doing this face

because now I've got
to get the body built.

I need it to be solid
as a rock.

Have you got any ganache
ready for me, Alex?

Because Alex's role
on this challenge

is mainly the tasting element,

he is also going
to be a ganache hero.

When I need him, I just shout.

I love doing yoga
and weightlifting.

go to the gym at five

with my husband.

It's part of my everyday life,
so that was helpful.

For our piece, we are going
to have Buckbeak bow down.

Save a bunch of long feathers.
There's a lot of gaps.

I'll have to cut more,
but I definitely can.

I've already got 400 feathers,
which is wild.

Buckbeak has
a really interesting face.

His face is quite narrow
and tapered in the front,

and it gets wider and wider.

And he has a little crown,

kind of like me,
like my turban.

Try our best to add
as many elements

as we possibly can.

to make a start

- on these wings, Jordan.

I've got one big
template here.

The obvious way, really,
to bring this Thestral to life

is for her wings to move.

You need
something light, firstly.

So, wafer paper
is a good go-to.

So, this is my homemade

edible fabric mixture.

It applies like
a layer of elasticity,

so it literally turns
from paper into fabric.

We need these wings
to move and flutter,

and we need them
to get into the finale.

- Alex?
- Yeah, yeah?

- Jordan and Zoe look stressed.
-Yeah.

Priya and Molly look like

- they're being
very constructive.

I'm gonna be blowing
some sugar lanterns.

I want to make
the candelabra look realistic.

So, I've added
a little bit of brown,

a little bit of black
to some of my isomalt.

This chandelier needs to look
like it's seen a lot of life.

Blowing sugar takes
a tremendous amount of skill.

And to be honest,

I don't work with sugar a ton,
I'm a chocolatier.

This one's fragile.

It's gorgeous, that one.
I love the different colors.

The sugar chandeliers
will be on top of
my tasting element,

which is an ode to childhood.

It reminds me of those summers
off with the kids.

We always have s'mores
on the beach.

We're gonna go
with a smoked,

toasted vanilla bean
marshmallow...

Oh, I can smell it.
It smells great.

...with a honey
graham tart shell,

smoked dark chocolate ganache.

So, I'm actually using
a chili chocolate today.

And to amp that up,

I'm going to put in
some cayenne pepper

and chipotle
for a little bit of smokiness.

I don't want it
to overtake the other flavors

or to blow
the judges' heads off.

-Not yet.
- A little bit more?

Yeah.

We're adding a little bit
of drama by doing

a pour-over
on a chocolate dome.

And it'll melt the dome
and reveal inside

our Cornish pasty
inspired s'more.

- Molly?
-Yeah?

-They look fantastic.
-Yay! I'm not surprised.

I'm a little surprised.

Typically, I would take
two days to make an entremet.

Um, we have six hours.

I will be doing an ode
to Buckbeak

and the pumpkin patch by making
the layered pumpkin entremet.

So, I'm just going
to simmer this.

I have a pumpkin scotch mousse.

I chose scotch
because Hogwarts
is in Scotland,

and scotch
has a really nice smoky flavor.

And then for our smoky element,
I'm making smoked caramel.

The fats in the cream

will absorb the flavor
of the smoke.

We smoke
a lot of foods at home.

I live in the South.

Smoking is like, just...
that's part of life.

I mold my caramels
into mini domes.

These are gonna go
into the blast

and they will pop out.
And they'll be chewy caramel.

Also inside
of the pumpkin entremet,

we are going
to do caramelized bacon

brushed with brown sugar
and maple syrup.

Oh!

Once the tasting elements
are inside of our entremet,

I can dust them
with some edible paint.

These flavors together,
pumpkin, caramel, bacon,

they are really, like, going
to really wow the judges.

I really hope so.

For Dobby's clothing,

I've rolled out
some sugar paste fondant.

Just texturizing it
with a knit texture mat.

I'm steaming Dobby,
and what that's doing

is making the surface
just sticky enough

that I can stick
the sugar paste fondant to him.

"Dobby has a steamed bottom."

Right now,
I'm working on trees,

so we're gonna have
a couple trees in the back.

So, I'm just gonna make
a bunch of trunks.

I casted the chocolate,

and then I'm gonna wrap it,
roll it around the PVC.

We did survive last week,

but from this point on,
we need to thrive.

Yeah, that's better.

Really hoping this week
is a new page for Zordan.

This is a flipping workout.

Zoe, I know it's a lot,

but this is
the semifinal, right?

I know. I know what's at stake.

The Thestral
is a full chocolate sculpture,

and I'm going to be using
modeling chocolate

much like I would use clay.

There's a lot that can be done
to really bring her to life.

Her angles and her ribs,
the detail in her beak.

She's a beautiful creature,

but very anatomically
complicated.

If I get an airbrush on it,
it's going to homogenize,

and it's just going
to fit better

- than it does at the moment.
- Okay.

Seeing you do this reminds me
of walking

into the Creature Shop
on the films

and seeing them create
the real hippogriff,

in which they did lay in
individual feathers,

thousands of them.

You didn't have any scenes
with Buckbeak, did you?

- No.
- Did you have a favorite scene?

Wingardium Leviosa's
probably my favorite.

That was my first day
on the film.

It's pumpkin mousse
with a candied bacon.

The pumpkin mousse
is a scotch pumpkin,

so it's got a little bit
of that smoky in there.

- Do you like scotch?
- I'm not a drinker.

Okay. I mean, it's burnt off,
but the flavors of it--

I don't eat bacon.
I don't drink, so...

I'm terrified
for our tasting now.

Buckbeak is very detailed.

I'm working on airbrushing
his wings in different colors,

and I'm not really loving
how this is looking.

It looks quite dull,

so I'm just using a sponge
and buffing it out,

just trying to add
all the little details.

The last 30 minutes

are winging
their way over to you.

I'm just gonna be
as fragile as I can

with this book, 'cause
I do not trust it at all.

I'm making
white chocolate candles.

I think I'll add some drips,

just to make them
a little bit more realistic.

Right now I'm doing
the floating dessert.

It doesn't need to be perfect,
because to be honest,

the one in the movie,
it's not a high-end cake.

So, Jordan, I'm just actually
just taking off a little bit

of this original gray.

It's just a little too strong
for my liking.

about this amazing Thestral.

It's come alive.

The movement
that you have in the wings

is absolutely brilliant,
and that's a testament

to how you've gone about
constructing them.

I love the contrast
between the skeletal body

and the bat-like wings.

The sheen that you have on it,
it almost looks like iron.

And you see the muscles
in the body.

It's the ribs.
It's the talons. It's the eyes.

It looks as realistic
as anything

that you would see here at
the Harry Potter Studio Tour.

And we decided to hide
the entremet in the vertebrae

There's a layer
of a chili chocolate cake,

and then we have the freshness
of a blackcurrant mousse

with some fresh jalapeños,

a little bit of Scotch bonnet
in there.

And then in the middle,
there's a tamarind marshmallow,

and then at the base,

there's a pink peppercorn
chocolate sablé.

I'm a little concerned about
the combination of flavors,

'cause as you may remember
from series one,

I'm not particularly exotic...

- Adventurous.
- ...in my taste.

I think you might be
pleasantly surprised with this.

It's kind of
a slow burn, the hotness.

the jalapeño and the habanero,

they're actually fruity,
so you're leaning into that.

The chocolate is great.
The heat comes through,

but very mildly
and nice along the tongue.

My one bit of feedback,
I'd say the ratio

of the blackcurrant mousse
that you have in here

is quite out of proportion
to the other elements.

I like the orbs,

but I do think the joints
could've been a little cleaner.

We see some where
that you have the chocolate.

There are some
that are a little bubbled

and a little heavy on the sugar.

You say all this,
but I'm distracted by the fun

and the joy of the whole piece,
which is lovely.

Wow. I think that bow
really ties into the story.

Great shape on the wings.

That really does bring
the piece to life.

Yeah, I remember seeing
the real hippogriff

while working on the films,
and you've got

the coloring just right,
the gray in the feathers.

What lets you down,
I think, is the way

these feathers
on his neck have curled.

The creature for the films
was made in that way.

The feathers were laid on
and went against each other.

I feel like he just looks
a little bit scruffy

and that takes away from
the elegance of the creature.

Okay.

We have a pumpkin entremet
inside of our scene,

so we can pull it
right off of the scene.

It is pumpkin and scotch
for the mousse on the exterior,

and then it has a layer

of caramelized bacon
on the inside.

This is very pleasing
on the eye, isn't it?

- It looks so cute.
- It looks great, doesn't it?

It's so well decorated.

Are you worried
about the bacon?

Well, I think that salty
and sweet can go together,

so you never know,
you might be surprised.

I might be surprised,
but I'm not sure.

Here goes.

- Well, I'm relieved 'cause...

Oh, no, it has
a bit of bacon aftertaste.

It was going well, but then
it went downhill last minute.

With the bacon, okay, all right.

Incredible texture
on the mousse,

and I love the caramel,
it's lovely and runny.

I'm gonna have to agree
with Warwick though,

that that bacon bite at the end

- is too bacon-y.

I actually like
the taste of the bacon.

I do think the piece
that I got was a little big

- and so it was chewy.

But I like the flavor of it.

Obviously, we have Dobby,

the most beloved characters.

Served the Malfoy family
for several years

until he was obviously freed.

And that's obviously
Aunt Petunia's cake,

I'm guessing,
that we see levitating.

Yes. You're absolutely right.
Yes, yeah.

And it's interesting,
it's very rare we see a cake

that looks like a cake
on this show.

He looks wearied.

From the little hairs
on his head

to the texture of the skin.
I mean, the feet.

Oh, do you know,
this poor chocolatier

was even hand-painting
Dobby's toenails?

- Yeah, exactly.
- Well, what a great job though.

I mean, those nails
really do look so lifelike.

The expression
that you have on Dobby's face

- and the posture.

I think you've really captured
the character's soul, in a way.

For the cake, I decided
to make a mole ganache.

Also a coffee cake
with a little cacao nibs.

Look at the cross section here
and the layers,

which look gorgeous
and they're well separated.

Um, and, uh, that's it, really.

I'm trying
to sound like him now.

- Well, yeah, but you do.

You're picking it up great.
"Layered" and...

No, but the proportions
of the layers look great.

The aroma of the coffee
and the mole,

it smells delicious.

It's a little bit spicy,
but not too spicy.

Smooth and crunchy.
It's very good.

So, quite strong flavors
that have gone into this.

I would have liked
maybe something of a tart

or fruity or something
that punches through a little.

But overall, incredible job.
