to our third challenge.

But there's no need for
celebratory Butterbeers

just yet, because everybody here
needs a clear head

for tonight's challenge.
- Because you'll be serving up

your creations in...

The Potions Room!

Nice.

This task is inspired by
a classic potion that was used

many times in the films,
one that gave us more Harries

than you'll ever see
at a Comic Con.

That's right, Polyjuice Potion.

Wow, we're identical.

Whatever you bake tonight
must have that Polyjuice power

of transformation, because these
showpieces are not going to be

quite what they seem.

At your workstations
are eight objects and artifacts,

which all relates to
a different character

from the world
of "Harry Potter."

Your challenge is to pick
any two objects,

then recreate them
as realistic,

edible showpieces.

I'm feeling
pretty confident.

I'm known for the kind of
illusion, hyper-realistic stuff,

and I'm super excited
to start.

As always, they will
have to taste delicious

because they'll be
judged by our meticulous

Ministers of Baking,

Carla and Jozef,
who will also be trying

to identify your cakes
amongst the real objects.

- OK.
- Things are about to get real.

Your six hours starts...

Now.
Let the baking begin!

For all of these items, what it
feels more comfortable for me,

it'll be definitely the teacup.

put the dessert inside.

very challenging.

But the judges will not believe
that I made this, so that can

give us,
you know, an advantage.

A Slytherin student who
sure hates Muggle-borns.

- Draco Malfoy.

So we have to
select two of these.

I mean, I came into this
competition like,

"I need to
make a broomstick."

- Malfoy?
- That's right.

And that's not all
that's new this year.

Those are Nimbus 2001s.
How did you get those?

A gift from Draco's father.

The Inquisitorial Squad badge,
I think, would be really cool

to make as one of
our tasting elements.

He's one of
my absolute favorites.

I'm looking at all these
objects, and I'm gonna do

the sherbet lemons.

this guy, the Skele-Gro.

I've done skeletons,
but nothing like this before.

For my showpiece today,
I am gonna be attempting

the Skele-Gro bottle.

I'm gonna carve it out of
cake and do it all by hand

and get those amazing details
in there.

Are you gonna do
the writing on that as well?

Yeah, I think I can hand-do
the writing on that.

So you've obviously got
the best characters

in the entire series.

So I do a lot of
hyper-realistic cakes.

Sometimes the things with
less details are really hard,

because there's
no hiding spots.

So they both
have to look the same.

Your hyper-realism
in cakes...

some examples of that?

Yeah, I've made a lot
of fun pieces.

Like a video game controller,
I've done a cheese wheel,

a dragon, pizza.

I love pushing myself to see
what else I can make.

I've won "Is it Cake?"
which is about realistic cakes.

you're a frontrunner, then?

You say this really leans
into your expertise?

It definitely does.
But you know what?

Anything could happen in this
kitchen, so we're continuing

to push ourselves.

I'm going to make
a ginger whack mega bonbon.

I'm gonna do
a really fun flavor.

Ginger, because,
you know, you guys are gingers.

Do you have
any redheads in the family?

- I have
two redheaded siblings.

They're my favorite
of the two.

So, you literally grew

We lived in England
for a while, and my brothers

always ran around
dressed in cloaks.

And every day, I'd take
my eyeliner pencil and draw

a little lightning bolt
on his forehead.

that it helps you?

Yeah, the kitchen is run
like a command.

I was part of air cadets.

That's why
we work well together.

We run it like an operation.

We know what we're doing,
we have a plan,

Uuhh... I got to think

Neither of us do hyper-realism
cakes, so this is something

that is really out
of our comfort-zone.

It makes me a little nervous,
I have to say.

Here, all the really warm,
nice flavors for Hagrid's...

to have a teacup
whenever we visit them.

Within the teacup,
I'm setting the tasting element.

It's a walnut
and pumpkin sponge.

On top,
there's a caramel-smoked

chocolate mousse
dusted with cocoa powder.

Don't shake it yet.

Wait until it's everything
covered in smoke.

I'm learning so much
with you, Rui.

And then on top,
the walnut sponge cake...

I'm making these edible
elements now to assemble

later on at the end.

- Nice.
- So now I'm on
the Inquisitorial Squad badge.

So, I've got
these cute molds.

I'm tempering some of
this amazing,

single-origin chocolate.

I'm adding some essential blood
orange oil to give that flavor.

Then we're gonna paint
the detail into the badges.

Finally, I've got
a pistachio gianduja.

That's gonna be with white
chocolate, some candied orange,

blend it all together,
and I'm gonna pipe it

into the mold.

OK, I've demolded the squad
badge top piece, Andy.

Nice-- right now, I'm adding
the finishing touches to

the Inquisitorial Squad badge.

So I am making the little loop
to attach the ribbon

and the little hinge to attach
the two pieces together.

- Only five hours to go.
- Hi, Molly.

- So we're each doing
tasting elements.

I think they work
really well together.

I'm gonna do my tasting

inside the handle, there will
be layers of salted-caramel,

masala chai, and cocoa nibs.

I'm gonna start off
with my caramel.

I'm gonna use a little bit
of Newfoundland sea salt today.

My family immigrated
from India to Canada.

One of my favorite flavors is
Newfoundland sea salt.

So I want to do
a salted-caramel to pair

with my masala chai ganache.

So I've just toasted some whole
spices for my chai ganache.

I'm doing a double-layer
bonbon today.

I'm gonna fill this with
my ganache, and once I pop

those out, they're gonna have
that gorgeous, green shine.

This really is a challenge
about details, and so I want to

make sure my details
are on point.

So, my chocolate
is soft and pliable...

for me to form this dagger.

Bellatrix's dagger
will be made

of primarily modeling chocolate
and tempered chocolate.

And I'm gonna be
hand-decorating the blade.

Because it has to fit
the handles that I've already

cast, I want to make sure
the size is just right.

I want it to have the illusion
of sharpness without having

the fragility, so...

pretty sharp.

The detailing and the carving
really comes through

when I paint it, but it's
gonna pop even more

when I luster it after.

I want to make sure that
this looks just like a blade.

Molly, can I have your hand
for a second?

Like that, yeah.

- They look amazing.
- Yeah.

Pretty freaking close.

For the Skele-Gro
bottle, I'm carving

a brown sugar sponge,
layered with

coffee and hazelnut
buttercream,

sealed with dark chocolate
ganache for structure.

So this cake is gonna be,
like, rich and indulgent,

but it's also got to stand up
enough and hold itself up.

Yeah, we don't want
the Skele-Gro falling over.

It's the last thing we need.

Then he'll need the Skele-Gro
to regrow his bones.

This is quite
a difficult work to do.

For this challenge, I'm gonna
make the armillary sphere

all out of chocolate.

The chocolate has taken me
to Paris.

I've been in Taiwan,
where I was in charge

of a chocolate museum.

So right now, I'm doing
the chocolate rings, and I will

make a lot of them.

I have to use
some physics and also

all the engineering
that my father has taught me

through the years.

Alex, darling,
how are you doing?

Yeah?
Uh, well...

- It's looking very complicated.
- It is.

I'm a little stressed
right now.

I need to make them
as even as possible.

They cannot be really heavy,
but they cannot be too thin,

but I think this is gonna
impress the judges a lot.

Once I have all of this,
I can start assembling.

That's actually
gonna be the size of my...

sherbet lemon dish.

I'll be making the sherbet
lemon bowl

using modeling chocolate.

What I've done is
I've taken two bowls,

tipped one onto the other,
so when I'm happy

with the outside of the bowl,
I can put the cakes inside.

It's got to be to scale,
because nobody's gonna

believe it if
it's too small or too big.

You've got to think about
the textures, you've got to

think about the surfaces,
the colors the tones.

So, I have done hyper realistic
cakes before and illusion cakes.

In fact, I really,
really enjoy it,

when I've got lots of
time to do it.

So what I'm doing first is
getting my cake batter

in the oven.
Then I'm gonna fill the bowl

with stacked cake,
and then I'm gonna fill that

with my homemade
lemon curd,

and then I'm gonna make
some Swiss meringue buttercream,

and I'm gonna flavor that
with lemon.

There's my sponge.
I'm very happy with that.

I'm having to sculpt this
little, tiny cake and just try

and make some marks and shapes
in there that look a little bit

like sherbet lemons.

I wish it could fly.
This is defective.

It doesn't fly.

I'm gonna have to
write a letter.

So I'm gonna get
started on my part of the broom,

which is gonna be to create
the actual broom handle

and the connectors
for the pedals for the broom.

And I'm making
the actual base.

To create the actual broom
handle, I'm gonna take some

isomalt, I'm gonna boil it up,
add a deep black color to it,

and then I'm gonna pour it
into a silicone tube

and let that set up.

I need to make sure
this is beautiful.

I just love the fact that
you can get that beautiful,

shiny finish, and I think
that's gonna really add to that

hyper-realism part of the broom.

Andy, just hold one hand here,
just in case

it was to fall off.
Just while I got a little bit...

- Oh, it's coming out the bottom.
- Oh, dear.

- Ooh.
- Oh my god.

The isomalt is
all over the floor.

Don't.

I do not have time
to reboil some isomalt

and create a new brew.

Thankfully, I've created enough
of the black isomalt that I can

pour it again.
- We probably needed
something stronger.

I need to make sure that
the plug on the bottom of

this tube is really, really
sealed in correctly,

because I really
need to fix this.

Otherwise, we ain't gonna
have no broom.

You need me

Yeah, if you can spare,

Devil's snare is a magical
plant which constricts around

and ensnares
whatever it touches.

- Hmm.

You have to relax.

If you don't,
it'll only kill you faster.

When you shout "Devil's snare,"
the bakers in every other team

will be tied together...

Right now, I'm working
on my isomalt to make

the windows for the lantern.

I'm just going
slowly but surely.

Then you can use
the blow torch to take out

the air bubbles.

The most challenging part
of doing this lantern,

it's the fact that
it needs to be very square

and straight.

If I don't have the sharp
edges, it will not

fool the judges.

And then I'm gonna create
all the details with fondant.

This is a hard challenge,
and it's the first time

doing it.
Not a good match.

I'm feeling behind,
that's for sure.

I need to dust it more with,
like, a darker bronze color.

Fast and fancy.
What a combination.

I'm so excited that
I am making the beaters' bats.

I'm going to make
a ginger whack mega bonbon.

It's gonna have a mango jelly,
a ginger ganache with a little

bit of crystallized ginger
to add some texture, and a fun

surprise of popping candy.

Now I am just working
on my bonbons.

I want the judges to notice
the finesse in our tasting.

You know, the tart shell is
really nice and thin.

It's super golden.
It's nice and crunchy.

Awesome.
The tasting element is done.

I did break one, but you know
what that means, Katie?

I love the texture of the top.

So I'm working
on my beaters' bats.

Height-wise, they're looking
really good.

I have the shapes right,
and I'm adding a lot of

different layers of chocolate.
They're worn, they're torn.

I'm using a wire brush,
you know, adding a lot of

texture, some natural
wood grains.

I really got to make sure that
the bats look quite,

you know, busted.

with a pecan crumble.

When we go camping
with my family, my daughter,

so we do the s'mores

with apples.

It's a pretty big broomstick.

So I'm gonna start
assembling my cake.

So first, a blood orange
simple syrup,

diplomat cream, the brown sugar

bourbon buttercream,
and candied pecans.

So, currently, I am working
on my broom shape.

I do have to start carving
my puff cereal treats.

I need to put my cake in
the middle layer and carve that

to align with the rest of
the shape of the broom,

and then go in with my brown
sugar bourbon buttercream

to cover the entire piece.

Now, it might sound like
an easier challenge

because we're not
asking our bakers

to do big, big showpieces,

but I think this will show that
the devil is really

in the detail.

I'm attaching the rings,

so my heart is beating
really fast right now.

I have to be really precise,

because if I put
a lot of chocolate,

it is not gonna look real.

taking a lot of time.

Such intricate details.

I've put a bit of armature
wire inside.

So I'm airbrushing
the Skele-Gro now to give it

some shade and kind of
age it a little bit.

I'm making
the love potion bottle.

I am filling my mold
with white chocolate.

This is the first time we have
to do two tasting elements.

That means I have to take on
a whole tasting by myself,

so I'm excited for that because
I am a pastry chef as well.

All right, financier is
going in the oven.

I used to own a patisserie
shop, and the flavors that

I chose for the love potion
bottle were one of our favorite

flavors for Valentine's day.

Everyone loves a financier
with piped marshmallow on top

and some raspberry liqueur
and some passion fruit crisps.

I'm piping on the chocolate
really thin.

I'm going to marry
the two sides together.

It's looking
amazing, Katie.

This is my first
hyper-realistic piece.

I worked so hard to make sure
that was buffing out the seam

because that's a dead giveaway
on chocolate.

What I'm really hoping is that
when I pop these babies out,

they're gonna look like
real sherbet lemons.

finishing touches.

with pate a choux crumble,
some pastry cream,

and also a rum toffee caramel.

Of all the things I'm going to
say, the Nimbus 2001 is cake.

It looks great, but I think
the bristles of the broom

are a little wet.

And also, one of the elements
is missing.

That silver piece of the broom
is not here.

The bottom of the broom is
squared off, too.

Don't tell me if I'm right.

I'm gonna try to
cut into it.

- And it's cake.

So I did a blood orange olive
oil cake with a smoked vanilla

diplomat cream, a candied pecan
crunch, and a brown sugar

bourbon buttercream
on the outside.

The sponge is really moist.

The pure blood orange, for me,
isn't coming through.

I love this cake.

I love the texture.

The pecans are delicious.
I really want to finish this.

The thing that I see a lot of
being done these days is

hyper-realistic fruits and

gianduja with white chocolate

with blood orange.

The texture, right?

Look how thin that

It's a lot of flavor packed
in this little heart.

You managed to fool us

simplistic about it.

or another dimension to it that
just took it from being what
