We are making a vegan lomo saltado with lionsmane.
Typically this dish would be made with a little bit of strip sirloin,
but we're gonna sub out that sirloin
for a lionsmane mushroom.

So we're making a pan-seared sea bass over a bed of lemon garlic spinach.
Wow, When you guys finished the competition first time round,
- what was it like going back to school? - Oh, I was a celebrity.

We had a lot of fun as kids on "MasterChef Junior,"

Cooking is something that we want to pursue in the long run.

and a beautiful aji amarillo paste.
I've never had anything like it. So I can't wait to taste it.

And honestly the mushroom, I was concerned
that it may be a little dry, but it doesn't read dry at all.
I do need more salt or more soy, or something that's giving some salt,
but the flavor overall, it's really nice.

How did you cook the fish?
I coated the fish in a little bit of flour, salt, and pepper,
just to get a nice crisp on it.
- Yeah, it's glistening. - Awesome.
- Ladies, fish is cooked beautifully. - Thank you.
It's soft. It's moist. However, when you cook fish,
don't cover it with the tomatoes.
- Otherwise it gets soggy, okay? - Okay.
You've got crisp fish. Show it off.
- Okay. - The spinach itself is bright.
There's enough lemon zest in there,
and I like that the beurre blanc has enough butter.
We're not shy with the butter over here, so don't worry.
- She's not shy about anything. - No.
I'm a fan of the seasoned breadcrumbs.
I think they really add a crunch and another aspect of flavor to the dish,
and it makes me very proud and happy to see two contestants after ten years,
come back, present such a mature and well-executed dish.

- What is it? - So what we're doing
is a healthier option of the Cuban frita,
which is a Cuban hamburger that we make in Miami.
And it's gonna be topped with an apricot bacon jam
- to balance out the sweet and the spicy. - Love that.
- And what's the blend? - So the blend is a lean ground turkey.
But we're infusing it with chipotle adobo sauce and Spanish style chorizo.

So I have to say, turkey burger,
you're taking a big risk. It's got to be really special.

a chipotle turkey burger with bacon jam.
And a side of baby gem Caesar salad with homemade croutons.
I got a little bit nervous when you mentioned turkey burger. Turkey, we know, is bland.
It's an absolute nightmare getting a turkey burger right because they're always dry.
So I'm desperate to get inside there.
Shall we? How long did you cook it for?
- 18 minutes. - 18 minutes?
That's a lot.
- Ooh. - It's not dry.
- Ooh. Wow. - Definitely not dry.
Burger's delicious, obviously.

You would really never serve a head of iceberg

We have fried chicken with Southern green beans,
mashed potatoes, and herb gravy.
I love the color on the chicken. Slightly nervous to get a really
good fried chicken done in half an hour.
Big risk in front of Tiffany Derry, let me tell you.
So hopefully it's cooked properly.
- It's definitely cooked. - Very nice.
I love the juiciness on the chicken.
The green beans, you can definitely tell that they've properly cooked.
I know you said herb gravy, but I'm not really tasting much flavor really.
We made gambas al ajilo over some creamy polenta
with some Spanish chorizo and Parmesan crisps.
Visually, it looks beautiful.
I'm loving the color of the shrimp.
The gambas are cooked beautifully.
- Yes. - But I think I'd get through
two or three tablespoons of that polenta
and then I'd have to stop because it's so rich.
But you've nailed the protein.
We have made you a bison steak
on top of a white sweet potato purée,
green beans, and a red wine reduction mushroom sauce.
It's very South Dakota.

The downside is the grainy mashed potatoes.
The potatoes need to be cooked more.
We're presenting Carolina sea scallops
with puréed parsnips, peas, hearts of palm, and plums.

The scallops are cooked beautifully.
However, the parsnips are sweet, the plums are sweet,
and so it does need a touch of acid.

Tried to let it tenderize a little bit in the sauce as well.

cranberry sauce, and fried okra.
You can see the technique and texture,
you know, the crispiness, the caramelization,
but I am a lifelong okraphobic.

Chicken's delicious. I mean, honestly, it's exceptional.
I love the sweetness from the purée.
Okra could be a touch crispier, if I'm honest.
