Food Truck teams,
welcome to Coachella Valley.

Well guys, we're here
at Hadley Date Gardens

and all these palm trees,

all 500 acres of
them are date palms.

A little history lesson.

So around the 1900s
farmers thought this area

felt like the Sahara Desert area
in Africa.

So they imported some seeds

to see if they could grow
some dates themselves,

and by the 1940s,

the Coachella Valley
was the number one

date growing area in the world.

These are Deglet Nour dates.

It's a delicious date
that's moist and sweet,

and perfect for cooking.

Now each date has a hard pit
as I'm sure you know.

If you get dates with
the pit on the inside,

I'm gonna show you
a really good trick

on how to get
the seed or the pit out

using a wooden kabob skewer.

If you take the flat
side of the skewer,

but then you simply
just push the date pit

all the way out to the top.

Did you see that?

And that is how you take
the pits out of dates

using the wooden skewer,
is that cool?

Loved it.

Now, guys, in front of you is
everything that you will need

to pit these dates yourselves.

Now when I say go,
I want you to come up

and grab a box of dates

and then bring them back to
your station and start pitting.

Once you've de-seeded
a pound of dates,

I'm gonna give you guys

our idea is to take
the fritter batter

that we've been using
for the lobster fritters

and to incorporate that
into a dessert dish.

Our fresh homemade zeppole
is a nice batter

with ricotta cheese,
sugar, cinnamon,

little bit of flour and eggs,

and a nice fig reduction with
the dates and an apple juice.

-Here sweetie.

Barbecue.

-We're doing chicken wings.
-And we're gonna make a sauce.

-Yeah.

Here one of these, that's it.

We're gonna buy orange juice
for the base of our date sauce.

Sometimes you just
gotta stick to your guns

and know what you're good at.

run with the idea

We arrive in downtown

We find parking right away.

Go on, this is
actually a good corner.

And we're parked across
from Mobile Moo Shu.

Everything's worked out
to how we planned it out.

Go ahead.

All right so, anywhere in
here is where we're going.

We are driving around
and finally we decide

to park over where
the other food trucks.

-Got it?
-You got it.

We've never been
scared of competition,

and we believe if it's
gonna bring the people

that we're gonna
get some good sales.

Look at Christine doing
a beautiful job with this thing.

So we take the chance
and we pull up

right next to one
of the other trucks.

For our specialty date dish
we're gonna do fresh zeppoles.

Our menu consists
of the date special,

which is our zeppoles.

Once our zeppole batter is made,

we basically will scoop
that into the fryer later.

When that's golden
brown we toss it

in a cinnamon and sugar mixture.

And then for the filling we've
made a date raspberry apple

type filling that
we've reduced the dates

that we pitted until we have
a nice squeeze bottle full

that we can just fill up
the warm zeppoles with.

You're not gonna get that at
Moo Shu, I can tell you that.

We're also doing our
shrimp quesadilla.

Some nice shrimp with Old Bay
that we cook on the flat top

and a nice pico de gallo

that we make from fresh
tomatoes and peppers.

Hi, are ya hungry?
How 'bout some dessert?

We made a local date zeppole.

We knew that the zeppoles
as a dessert choice

on our truck would
be a great one.

Okay.It's only eight
for a local date.

And then you'll get
a date with me, too.

And this is
really starting to be

a great menu choice
for our truck.

we have a first date donut,

which is our date
donut with lemon zest

and then also
the milky date sauce.

I'm throwing in some juice
and some evaporated milk,

a little bit of honey

and a little bit of
cayenne pepper

for a little bit of
added spice.

Once we cook that down
it softens the dates enough

that we can put 'em in
the food processor

and then really get
a nice, rich sauce going.

Then we're doing our
Korean bulgogi fries.

All right, so should I wait
on cutting this meat

and start a donut?
-Yeah.

Today we're gonna be selling
our date barbecue sauce.

That's dates that we're
reducing with some water,

some honey, some pepper,

some soy sauce.
-Seasoning with sriracha.

We're reducing some freshly
squeezed orange juice right now.

We got garlic parm
and the classic buffalo.

-Yay.

I put in a little bit of oil
and then added in some ginger.

I thought the ginger
would really bring out

the sweetness of the dates.

It's getting down to the wire

and we're super worried
about the donut.

What we ended finding was

there's far too much
baking soda in it,

which caused it
to look very burnt

every time it came
out of the fryer.

I'm gonna love this donut.

It's gonna be the best
donut we've ever had.
